If you read French — or even if you don’t — Le Grand Livre Des Fromages (The Big Book of Cheeses) is an interesting read and a free download as a PDF. It covers the cheeses of the world, including relative newcomers like Japan, and seems to have a pretty decent section on American cheeses as well, which is nice to see in a European cheese book.
