Bavarian Limburger, from the makers of Anton’s Liebe Rot, Kaserei Zurwies. Limburger is synonymous with STINKY, and this cheese does not disappoint. I had it wrapped, bagged, and shoved in the bottom of my backpack, but still caught a distinctive…aroma wafting from my bag while riding the subway home. Here’s hoping my fellow passengers didn’t notice.
Unlike the monotone stink of the deli case Limburger that we Americans grew up with, the crystalline red rind of this oozing beauty hides a multi-layered, complex blend of flavors and aromas; creamy, mushroomy, meaty, brothy, briney and sweet, with a slight ammoniac sear on the roof of the mouth going down and a lingering, sinus enveloping essence filling the mouth long after your last taste.
