CHEESE NOTES

High-res My first cheese using raw milk: a Cheddar, fresh from the press. The milk comes from  Grady’s Farm in Red Hook, NY, a small, relatively new, sustainable farm that mostly focuses on eggs, meat, and vegetables for now, but may be expanding into dairy in time. I’m going to be doing some web work for them so Michael and Saundra were kind enough to provide me with some milk fresh from the cow! Hopefully my cheese will do this high quality milk justice.
If you want to buy from them, check out their stall at the Jackson Heights farmer’s market on Sunday’s. They hope to have a farmstand in front of their farm on Rte 9 come spring.
