CHEESE NOTES

High-res Tin Willow Tomme, from Washington state cheesemaker Black Sheep Creamery. An herbaceous, grassy, nutty sheep’s milk tomme with a nicely toasted undertone. According to their site, the milk comes from a neighboring farm’s herd — the Tin Willow Farm of the name — and has a unique terroir which is reflected in the cheese.
