CHEESE NOTES

This looks really interesting: the trailer for La Guerre Des Fromages Qui Puent (Translated: “The War of Smelly Cheeses”), a documentary about the rapidly changing cheesemaking landscape in France and America.

France, long the home of the greatest diversity and pinnacles of achievement in the cheese world, is seeing its traditions being lost to the industrialization and commercialization of their finest cheeses. Raw milk cheeses are an ever-smaller percentage of French cheese output and are often hard to even find in French supermarkets, with pasteurized cheeses becoming the lions share of the output.

America, meanwhile, is seeing the oft-discussed explosion of artisanal cheesemaking, with consumer’s appetites for quality cheeses expanding exponentially in the last decade.  Many American cheesemakers are even traveling to France (in one scene, accompanied by the filmmakers), in pursuit of the holy grails of French fromageurs, to bring the methods, cultures and secrets back with them across the ocean.

The trailer even visits the Beecher’s cheese plant in Manhattan, expressing astonishment at the sight of fine cheese being crafted in the canyons of New York City. 

Hopefully this will be available in full soon! I tried to watch it via the Pluzz site but streaming was blocked for American IP’s.
