CHEESE NOTES

High-res Frere Fumante, from 3 Corner Field Farm in Shushan, NY. The Fumante is a smoked version of their Basque-style sheeps-milk cheese, Battenkill Brebis. The name means “Smoking Brother”, and is in honor of the monks who actually do the smoking of the cheese — over hickory — at the nearby Skete Monastery (known as well for their dog training program, specialized in German Shepherds but also offering general obedience training for dogs of all ages and breeds). 
With a paste that is firm, smooth and slightly crumbly, this is an herbaceous, nutty, slightly tangy cheese with a deep but subtle campfire smokiness infused throughout.
