Ardrahan, a washed-rind from Ireland, a land not often mentioned when speaking of washed rinds and stinky cheeses in general. Made by the Burns family farm in Kanturk, Ireland, they started making this cheese in the early 80’s and initially exported most of it to France where there was an audience for more pungent cheeses. Ireland (and the rest of the world) has since caught up, for the most part.
With a soft paste dotted with tiny eyes, this cheese hits the nose first with an aroma of grass, barnyard, peat and mold, but is mild in flavor with a buttery meatiness and light nutty undertone.
