Farmhouse Cheddar, first tasting, at 1 month. With a light cheddary aroma, this is still a very young cheese, mild and sweet in flavor; nice, but without much personality or punch. The paste in the center is still bone white, slightly moist and noticeably less flavorful than the paste nearer the wax. I had originally planned to eat this wheel at 1 month’s time — and it’s certainly enjoyable in its own way and might make a nice melter — but will instead re-wax the open edge and pop it back into the wine refrigerator for another month.
