Selles sur Cher, from the Loir-et-Cher department in the Loire Valley of central France, is a wonderful example of ashed bloomy rind goat at its finest. This particular wheel was absolutely a point, the stony speckling of the green and gray rind revealing an oozing creamline around the pearly white paste.
What strikes first is the aroma, at once musty like a cool, moist cave and with an intensely herbaceous overtone, smelling distinctly of freshly cut green hay mingled with the flowers and plants of the fields from which it came.
The interior is creamy and oozing around the edges, with a pillowy, velvety, slightly chalky paste underneath. The flavor is mild, creamy, delicately sweet and salty with a lightly tangy bite, smooth and yielding in the mouth.
