Le Bruzy, a washed-rind goat’s milk cheese from La Fermière de Mean, an organic cooperative in the Ardennes region of Belgium. Belgium is a country known for its “Trappist” washed rind cheeses, traditionally made by monks, such as the Chimay (washed with the beer of the same name).
Le Bruzy is a washed rind goat’s milk cheese, the rind golden pink and slightly sticky and grainy. In flavor it is mild but complex, meaty and nutty, with an unusual fruitiness and floral notes.
